sanitation means for all the cleansing and disinfection operations that are used in the food sector to have a maximum number of microorganisms to safe levels required by health and hygiene needs. The cleaning consists of two essential components:

  • cleansing, or washing activities, key moment because with it, as well as remove the debris, it sets the stage for the second phase:
  • disinfection or treatment on an area previously "clean" in order to destroy all pathogenic microorganisms and to minimize the number of harmless microorganisms or saprophytes.
